Pumpkin Pie
dash salt
2/3 C sugar
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves
1 2/3 C milk
1 1/2 C mashed pumpkin
2 slightly beaten eggs
Sift dry ingredients. Add eggs. Add milk and pumpkin. Pour into
pastry lined 9" pie pan. Bake at 450 F 10 minutes; reduce temperature
to 325 F. Bake until knife inserted 1 1/2 inches from edge comes
out clean (35-40 minutes). Do not leave it in until the center
is firm, as it will be badly overcooked and somewhat rubbery.
