Pumpkin Pie
Makes 2 - 9" pies
1 large can pumpkin
1 lb dark brown sugar
Dash of salt
7 tsp flour
3 1/2 tsp cinnamon
1 Tsp fresh grated ginger
3 1/2 Tbsp Blackstrap Molasses
3 or 4 eggs (Medium 4, Large 3)
3 1/4 cups evaporated milk
3 1/2 tablespoons melted butter
In a mixing bowl, pumpkin, dark brown sugar, salt, flour, cinnamon,
fresh grated ginger, molasses and eggs. Then heat evaporated milk
and melted butter slowly. Do NOT allow to boil. When very hot,
combine with mixture above. When mixed, pour into unbaked pie
shell. Bake 10 minutes at 425 degrees Then 40-60 minutes at 350
degrees Test with knife or toothpick If not done, continue baking
and check at 5-10 minute intervals.
