PUMPKIN PIE
9" unbaked pie shell
1 1/4 cups fresh pumpkin
3/4 cup sugar
1/4 teaspoon salt
1/4 teaspoon ginger
1 teaspoon cinnamon
1 teaspoon flour
2 eggs, slightly beaten
1 cup evaporated milk
1/2 teaspoon vanilla
Preheat oven to 400.
Combine pumpkin, sugar, salt, ginger, cinnamon, and flour in bowl.
Add eggs and mix well. Add milk and vanilla, mix. Pour into pie
shell and bake 45-50 minutes or until knife inserted near center
comes out clean.
